Tomato Onion and Cucumber Salad Recipe



This tomato, onion and cucumber salad is delicious made with homemade red wine vinaigrette.

1 large cucumber, sliced thinly

1 large red onion, sliced thinly

4 plum tomatoes, sliced thinly

½ cup of shredded mozzarella cheese

¼ cup of red wine vinegar

¼ cup of olive oil

2 teaspoons of Dijon mustard

1 clove of garlic minced

2 tablespoons of fresh lemon juice

2 tablespoons of fresh parsley

In a large bowl, mixed the sliced cucumber, red onion, plum tomatoes and shredded mozzarella.

To make the dressing, in a small bowl, combine the red wine vinegar, olive oil, Dijon mustard, minced garlic and lemon juice.

Whisk together until combined.

Pour mixture over vegetables. Garnish with fresh parsley.

Note: If you can wait, this salad tastes even better if you let it refrigerate for 3 hours to allow the flavors blend.
