Shrimp Quesadillas



I love making quesadillas, especially anything with shrimp. This tasty shrimp quesadillas recipe is flavored with scallions and spicy Monterey jack cheese.

2 tablespoons of unsalted butter

1 cup of chopped scallions

1 jalapeno pepper, seeded and diced

2 garlic cloves, minced

1 1lb of medium shrimp, peeled, deveined, and chopped

¼ cup of mayonnaise

2 tablespoons of chopped fresh cilantro

½ teaspoon of salt

16 flour tortillas, 8 inch

2 cups of Monterey jack cheese with jalapeno peppers

In a large skillet, heat the butter on medium high setting. Add the chopped scallions, jalapeno pepper and garlic. Add the shrimp and cook for another 3 minutes. Remove from heat. Stir in the mayonnaise, cilantro and ½ teaspoon of salt.

Place a tortilla onto a baking sheet that has been sprayed with cooking oil. Spoon in ½ cup of shrimp mixture and sprinkle with ¼ cup of Monterey jack cheese. Place another tortilla on top. Repeat procedure until you complete eight quesadillas.

Spray the top of the quesadilla’s with cooking spray. Bake at 475 degrees for 5 minutes or until golden brown in color. Cut each quesadilla into quarters. Serve with Apricot Salsa.
