Using seasoning and spice really brings out delicious and different flavors in cooking food. Just about every ethnic background has their signature herbs, spices and seasonings that are used to bring out a certain taste to a dish.

Cajun and Creole cuisines are known for using cayenne pepper and file’ powder(which acts as a thickening agent in gumbo dishes.)
