Seafood Salad Recipe



This is a nice way of treating yourself to something other than garden salad. This seafood salad recipe is flavorful with eggs, sweet pickle and rice to give you a nice balanced meal.

1 1b of frozen cooked shrimp

6 oz of crab meat

3 cups of cold cooked rice

1/2 cup of minced red onion

1/2 cup of sweet pickles

1/1/2 cup of sliced celery

3 hard-cooked boiled eggs

1 tablespoon fresh lemon juice

1 tablespoon of grated lemon zest

1 cup of regular or reduced fat mayo

Crisp salad greens

Tomato wedges (optional for garnish)

Combine all ingredients except greens and tomato wedges. Season to taste with salt and pepper. Chill.

Serve on a bed of salad greens and garnish with tomato wedges if desired.
