Santa Fe Chicken

Olive oil
4 chicken breasts, pounded to 1/2" thickness
1 large onion, chopped
SW seasoning (any brand)
1 can chili beans smashed/undrained
Mexican Mix cheese
½ cup of salsa
Salt and pepper

Coat chicken with SW seasoning.

Brown each side of the chicken in hot oil. Add onions, cook till soften.

Mash ½ of the chili beans with a fork then add all to pan. Add salsa, then season with salt and pepper.

Cover, simmer over med heat for about 15 minutes, continuing to smash beans as they soften. Top each piece with cheese and melt. Serve with rice and corn.
