Salsa De Chile Verde



This Salsa De Chile Verde Sauce is flavorful with garlic, onion and green chiles. This can be used as a warm sauce for enchiladas.

2 tablespoons of vegetable oil

1 small white onion, chopped finely

2 tablespoons of flour

2 cups of roasted green chiles, finely chopped

¼ cup of garlic puree

2 cups of chicken broth

½ teaspoon of salt

To make the garlic puree, peel eight cloves of garlic by smashing the cloves with the side of a knife. The peel should slip off of the garlic cloves easily. Place the garlic into a blender or food processor and add 2 cups of water. Process until slightly smooth. Place the puree into a bowl and set aside.

In a skillet, sauté the onion in the vegetable oil and cook until translucent. Add the flour and stir well. Stir in the roasted green chiles, garlic puree, chicken stock and salt. Simmer for 20 minutes.

Place the mixture into a blender or food processor and puree. Use immediately or store in the refrigerator or freezer for later use.
