Rosemary Chicken Recipe



This Rosemary chicken recipe is something you may like to make often. The combination of this herb along with the fresh lemon juice creates a tasty glaze.

2 lbs of chicken, combination of thighs and drumsticks

2 tablespoons of Olive Oil

2 tablespoons of unsalted butter

½ cup fresh lemon juice

¼ cup of sugar

2 small shallots, finely chopped

1 tablespoon of dried rosemary

1 teaspoon of crushed black pepper

1 teaspoon of kosher salt


Preheat oven to 425 degrees.

In a small saucepan, heat the olive oil and butter over medium heat.

To the pan, add the shallots and rosemary and cook 2 to 3 minutes. Add the lemon juice, sugar, pepper and salt. Simmer over low heat for 6 to 8 minutes until slightly reduced and it becomes syrupy. Cool slightly.

Meanwhile, take the chicken and place into a baking dish and coat with the sauce. Bake until the chicken is golden brown between 30 to 40 minutes.
