Ribs Caldereta

500 grams of special ribs, cut into pieces
1 bulb medium onion,chopped
1 head of garlic, crushed and chopped
1 small can of tomato sauce
1/2 cup of ketchup
1/4 cup of soysauce
1 cup of sweet pickels with the juice
10 -15 pcs of green olives
juice of 1 lemon
1 pc medium-sized red bell pepper,sliced into wedges
2 pcs of small potatoes, cut into quarters
1 big pc of carrot, cut the same size of potatoes
1/2 cup of frozen green peas
1/2 cup of grated mild cheddar cheese
salt and pepper to taste, just a pinch for each



PROCEDURE:
1. Mix the soya sauce,lemon juice,tomato sauce,pickels and its juice,onion, garlic and ketchup together.

2. Marinate the ribs in this mixture for atleast 1hour, but it will be best if you will marinate it overnight so the flavor will be fully absorbed.
3. place in a covered pot and add the potatoes,carrots and olives and bring to a boil, stirring constantly to prevent burning while letting it boil for atleast 1o minutes.

4. Turn the fire low and let it simmer for 30-40 minutes or until the meat is very tender,,adding more salt and pepper to adjust the taste.

5. When the meat is tender and cooked, add the frozen peas and grated cheddar cheese and red bell pepper and simmer for another 5minutes in a very low fire.

6. Serve with steamed white rice or brown rice for a delicious and complete dinner.
