Rasta Pasta Salad

Here is a simple version of Rasta Pasta Salad I created. I’ve included yellow and green peppers, which represents the island of Jamaica.

1 pound of tri-colored pasta bow ties

2 cloves of roasted garlic, mashed

2 large yellow bell peppers, chopped

1 large green bell pepper, chopped

1 small red onion, diced

¾ cup of reduced fat mayonnaise

1 tablespoon of light olive oil

1 and ½ tablespoons of Jamaican Jerk Seasoning (Such as Jamaica’s Choice)

2 tablespoon of fresh chopped parsley


Cook the pasta according to package directions. Drain. Place pasta into a large bowl and set aside.

In a large non-stick pan heat the olive oil on medium heat. Sauté the peppers and onions for about 5 minutes. Set aside.

In a bowl, create the salad dressing by combining the reduced fat mayonnaise, roasted garlic, parsley and jerk seasoning. Stir together to blend.

Add to the cooked pasta and serve.
