Potato Salad Recipe

This delicious potato salad recipe is a classic one made with boiled eggs and sweet pickle.

2 pounds of Yukon Gold potatoes, cut into chunky pieces

3 green onions, diced

3 stalks of celery, diced

3 small sweet pickles, diced

1 small red onion, diced

3 hard boiled eggs-chopped

3 tablespoons of apple cider vinegar

2 tablespoons of Dijon mustard or regular mustard

1/4 cup mayonnaise or Miracle Whip Salad Dressing

1 tsp paprika (optional for garnish)

2 tablespoons of crispy bacon bits (optional for garnish)

Salt and pepper to taste


Cover potatoes in pan with cold water and bring to a boil over high heat and cook until done. While potatoes are cooking, chop red onions, celery, scallions and sweet pickle and combine into a large mixing bowl. When potatoes are cooked, drain in colander and add to diced vegetables. Sprinkle with apple cider vinegar.

Add chopped eggs, mustard, mayonnaise or Miracle Whip and season to taste with salt and pepper. Incorporate all ingredients and toss gently. Garnish with paprika and crispy bacon bits if desired.
