Mojo



Mojo or Cuban marinade has multiple uses. It can be used to pour over vegetables and used as a marinade for grilled meats. It can also be used as a salad dressing. The fresh Mojo will last for about 5 days in the refrigerator.

½ cup or Spanish olive oil or extra virgin olive oil

2 tablespoons of diced red onion

3 cloves of garlic

¼ cup of lime juice

¼ cup of orange juice

1 tablespoon of white distilled vinegar

1 teaspoon of grated lime zest

1 teaspoon of dried oregano

3 tablespoons of fresh cilantro

1 teaspoon of kosher salt

½ teaspoon of crushed black pepper

In a blender, combine all ingredients. Season to taste. Use immediately or place in a glass jar with a tight lid for later use.
