Mexican Black Beans



This authentic Mexican black beans recipe takes about 10 hours to cook. The actual prep time is quick though. This is probably good to make on a lazy weekend day.

2 pounds of black beans

12 cups of water

3 garlic cloves

1 red onion, chopped

1 ½ teaspoons of ground cumin

½ teaspoon of kosher salt

½ teaspoon of crushed black pepper

2 ham hocks

Wash the black beans thoroughly and drain making sure to pick out any rocks. Place the beans into a large oven-proof casserole dish. Add the 12 cups of water to the beans, garlic, cumin,kosher salt, pepper and the ham hocks.

Cover the beans tightly with a casserole lid or aluminum foil. Bake the beans in a 275 degree oven for about 10 hours or until the beans are tender. Check periodically and stir the beans to keep them from drying out. Season to taste.

NOTE: This recipe also could probably be prepared in a slow cooker for 8-10 hours on a low setting.
