Marinated Grilled Fish



This marinated grilled fish is a good option to eat a couple of times a week. Be sure to let the fish marinate thoroughly.

2 pounds of flounder or catfish

2 teaspoons of dried thyme

1 teaspoon of paprika

1 teaspoon of dried oregano

1 small scotch bonnet or habanero pepper, minced without seeds

¼ cup of fresh lemon juice

1 tablespoon of rice wine vinegar

1 tablespoon of soy sauce

1 cup of light olive oil

In a glass bowl, whisk together all the ingredients minus the fish. Place the fish into the bowl and coat each piece thoroughly with the marinade. Let it sit in the marinade for at least an hour.

Place a grill pan onto the stove on medium high heat. Coat with a little oil and place the fish on to the pan, Cook the fish thoroughly and turn once the appearance becomes opaque. Serve immediately.
