Macaroni Salad is common especially in the summer, but you can have this anytime. This macaroni salad recipe is quick to prepare with eggs and sweet red pepper.
1 small box of elbow macaroni, (cooked to your preference)
1 small green bell pepper, chopped
1 small red bell pepper, chopped
1/2 to 3/4 cup of mayonnaise or Miracle Whip salad dressing
2 boiled eggs, chopped
1 small red onion, finely diced
Paprika for garnish (optional)
In a large bowl, combine the cooked elbow macaroni, chopped egg, red and green pepper, red onion and mayonnaise or Miracle Whip. Cover and refrigerate until chilled. Sprinkle with paprika.
*Note: You can make this a little more sweet by added jarred roasted red pepper.
