Louisiana Catfish



This is an easy Louisiana catfish recipe. This is a great weekday meal that can be made in a flash.

2 pounds of catfish

Juice of 1 fresh lemon

1 lemon, sliced

2 teaspoons of cayenne pepper

1 & ½ tablespoons of lemon pepper seasoning

1 tablespoon of unsalted butter, melted

1 tablespoon of light olive oil

Preheat broiler.

Brush both sides of the catfish with the fresh lemon juice. Sprinkle with the cayenne pepper and lemon pepper seasoning. Using a pastry brush, brush the fish with the olive oil and melted butter.

Place the fish in a broiler pan that has been coated with cooking spray. Broil for five minutes on each side. The fish should flake easily. Serve with sliced lemon slices.
