Jerk Shrimp Salad
This is a delicious jerk shrimp salad giving you the taste of spicy and sweet. I’ve used white balsamic vinegar in the salad dressing, which has a mild sweet flavor to complement the ripe mango used in this recipe.
1 pound of large shrimp, peeled and deveined
1 and ˝ tablespoons of light olive oil
1 tablespoon of dry Jamaican Jerk Seasoning (such as Jamaican Choice)
7 cups of Mesclun greens (spring mix)
1 ripe large mango, peeled pitted and sliced
(Ingredients for the dressing)
2/3 cup of light olive oil
1/3 cup of white balsamic vinegar
2 teaspoons of fresh thyme, finely chopped or 1 teaspoon dried
2 scallions, sliced.
Pinch salt and pepper
In a large bowl, sprinkle the tablespoon of jerk seasoning over the shrimp and coat evenly. Marinate for a minimum of 30 minutes to an hour.
While the shrimp is marinating prepare the salad. Place the lettuce mix on a large platter. Top with the sliced mango. Set aside.
To make the vinaigrette, whisk the olive oil and vinegar. Add in the scallions and fresh thyme to complete. Add a pinch of salt and pepper to taste. Set aside.
Add the olive oil to a grill pan on medium high heat. Add the marinated shrimp and cook for about 2 minutes on each side.
Add the grilled shrimp to the salad mix and pour the vinaigrette over the salad to complete. Serve immediately.
