Jamaican Planters Punch

This refreshing Jamaican Planters Punch cocktail is a nice accompaniment with a meal or as an after dinner drink. I find some versions too sweet, so I created this version topped off with sparkling water.

Yield 2 servings

4 tablespoons of strawberry flavored syrup

2 tablespoons of granulated sugar

1 tablespoon of fresh lime juice

8 ounces of light Jamaican Rum

12 ounces of Poland Spring’s raspberry lime sparking water (extra cold)

6 cubes of ice

Slices of fresh oranges

Slices of fresh lime

Mint sprigs

In a small pitcher, mix together the strawberry syrup, sugar, rum and lime juice. Stir well.

In two tall glasses, add in 3 ice cubes for each. Pour in the sweetened mixture evenly for each glass. Top off with six ounces of the raspberry lime sparkling water. Garnish with the slices of fresh orange and lime and mint sprigs.
