How to Make Grilled Jerk Chicken

- 1/2 finely chopped scallion
- 2 tsp fresh thyme leaves
- 1 tsp pimento "allspice"
- 1/4 ground nutmeg
- 1/2 cinnamon
- 1/2 ground cloves
- 4 to 6 hot peppers, finely ground (Habanero or Jalapeno)
- 1 tsp black pepper
- 1 tsp cayenne pepper
- black peppercorns,crushed
- 2 tablespoons white vinegar
- 2 tablespoons mustard seeds
- 1/4 Caribbean hot sauce
Steps - Combine all ingredients in a blender or food processor.
- Blend into a paste.
- Place (about 8 pieces) of chicken in a ziplock bag.
- Pour 1/2 of mixture into bag and massage chicken.
- Refrigerate marinated chicken for 4 to 6 hours.
- Turning the bag occasionally.
- Prepare your grill.
- Spray the grilling rack with Pam first to reduce sticking.
- Place chicken on pimento wood over grill, put the coals to the opposite side.
- Cover and let cook.
