Gingerbread
Here is a tasty gingerbread recipe made with molasses and plenty of fresh ginger. I’ve added crystallized ginger giving this bread even more flavor.
¼ cup of dark molasses 1 cup of packed brown sugar 1 large egg, beaten 1 stick of unsalted butter ½ cup of hot water 2 cups of all-purpose flour 1 teaspoon of baking powder ½ teaspoon of salt 1 teaspoon of nutmeg 1 teaspoon of ground cinnamon 1 tablespoon of fresh grated ginger ½ cup of crystallized ginger, chopped roughly
Preheat oven to 300 degrees. Spray a loaf pan with non-stick cooking spray. Set aside. Melt the butter, molasses and brown sugar over low heat in a saucepan. Add the hot water and mix well. Set aside. In a large bowl, combine the baking powder, flour, nutmeg, cinnamon and salt. Add in the grated ginger and egg. Pour in the melted molasses mixture and mix until combined. (Do not over stir.) Add in the chopped crystallized ginger. Pour the mixture into the greased loaf pan and bake for 1 hour. Allow the bread to cool before serving.
