Fried Sweet Plantains

Make sure to use ripe plantains that have almost turned black in color. The darker the plantain the sweeter.








4 ripe plantains

Vegetable oil for frying

Kosher salt to taste

Peel the plantains and cut them on the diagonal into ½ inch thick slices.

In a nonstick pan on medium high heat, pour in a thin layer of oil about 1 inch. Cook for about 1-2 minutes on each side until golden brown.

Place the plantains onto a plate that has been lined with paper towels. Sprinkle with kosher salt and serve immediately.
