Fried Chicken Livers Recipe
This Fried Chicken Livers Recipe I make as often as I can. In this recipe I use olive oil which imparts a nice flavor with the onions. 1 lb. chicken livers, rinsed and drained
8 tablespoons of olive oil 2 large onions, sliced 1 tsp of kosher salt 1/2 tsp of crushed black pepper 1/2 tsp of cayenne pepper 2 tsp of garlic powder 2 tsp of onion powder Flour
Take a cast iron skillet or heavy pan and preheat on a medium setting.
While the skillet is getting heated, season the chicken livers with the salt, pepper, cayenne pepper, garlic and onion powder and stir to evenly coat the chicken livers.
Pour some flour into a plastic bag and pour the chicken livers into the bag to evenly coat them. To the heated cast iron skillet or heavy pan, swirl into the pan 7 tablespoons of the olive oil.
Take the chicken livers out of the bag, making sure to shake off the excess flour and place into the pan, one by one. Continue to cook at a medium setting until almost brown on the bottom. Cover with a lid for about 15 minutes.
After the 15 minutes are up, take lid off and turn chicken livers over. Add sliced onions and put on top of livers and drizzle the remaining 1 tablespoon of olive oil. Cook for another 5 minutes until onions are somewhat translucent.
Take the lid off and stir the onions and chicken livers together. Taking the lid off takes some of the moisture out. The onions will start to brown. Cook the onions and chicken livers to your desired tenderness.
Note: This is a dish you have to babysit. You want to make sure you watch over them as they cook.
