Farmer's Cake

Ingredients:

2 cups Sugar
2 eggs
2 tsp. Baking Soda
2 cups Flour
20 oz. can of Crushed Pineapple

Preheat oven to 350. Mix all ingredients by hand. Pour mixture into greased & floured baking dish.
Bake for 40-45 minutes or until toothpick comes out claen. Cool completely before frosting.

Frosting:

3/4 cup sugar
2 egg yolks
1/2 cup grated coconut
1 cup heavy cream
4 tbs. butter or margarine
1/2 cup nuts (pacans/ almonds/ walnuts)

Mix all frosting ingredients except coconut & nuts of your choice. bring to a boil & cook over low heat for 12-15 minutes. Remove from heat and beat until thick. Add coconut & nuts, spread over cake.
