Okra is a key ingredient in Louisiana recipes. This easy Creole Okra recipe comes together with flavors of corn and tomato.
3 plum tomatoes, diced
1 large sweet onion, diced
1 tablespoon of butter
2 tablespoons of canola oil
2 10 oz bags of frozen cut okra
1 packet of Goya or Badia Seasoning
½ teaspoon of crushed black pepper
1 teaspoon of crushed red pepper
2 teaspoons of garlic powder
1 10 oz bag of frozen sweet corn
1 tablespoon of tomato paste
2 teaspoons of sugar
In a large frying pan, sauté the onion, plum tomato and cook in the canola oil and butter for a few minutes.
Add the corn and okra. Add the Goya or Badia seasoning, garlic powder, crushed black pepper and red pepper, sugar and tomato paste. Cover partially and cook the vegetables for 45 minutes at a medium heat. Adjust seasonings if needed. Serve while hot.
