Creole Green Beans



This Creole Green Beans recipe has the taste of sweet onion and is flavored with slices of bacon and tomatoes.

1 pound of frozen haricot verts string beans

4 slices of lean bacon, sliced

1 teaspoon of butter

1 cup of sliced Vidalia onion

1 small shallot. sliced

1 cup of diced canned tomatoes, with juices

1 teaspoon of kosher salt

¼ teaspoon of crushed black pepper

¼ teaspoon of cayenne pepper

1 tablespoon of tomato paste

1 teaspoon of sugar

In a large glass bowl, microwave the green beans on the frozen vegetables setting. Drain well and set aside.

In a saucepan, using medium high heat, melt the butter and olive oil. Add the bacon. Cook and stir until the bacon becomes somewhat crispy and releases the fat. Add the onions and shallots until translucent in color about 3-4 minutes.

Add the sugar and diced tomatoes with juices and cook an additional 3-4 minutes. Add the tomato paste.

To the pan add the drained string beans and cook until heated through about 2-3 minutes.

Serve while hot.
