Chicken Tequila Recipe



This is a great meal to cook that is quick to prepare. This chicken tequila recipe is simple and tasty. Toss with cooked linguine.

1b of boneless chicken breast

2 tablespoons of olive oil

1 cup of chunky tomato salsa with jalapeno

2 plum tomatoes, diced

1 cup of chicken broth

3 cloves of garlic, minced

˝ cup of tequila

Juice of 1 lime

2 teaspoons of lime zest

2 teaspoons of chili powder

˝ teaspoon of cumin

3 tablespoons of fresh chopped cilantro

4 cups of cooked linguine

Kosher salt to taste

Fresh Parmesan cheese

In a large skillet on medium heat pour in the chicken stock until it comes to a light boil. Add the chicken breast and reduce to a simmer and cook until done about 4 to 5 minutes.

Remove the chicken from the stock and cut into chunks. Set aside. Reserve the broth.

In the large skillet bring the pan to a medium high heat and then add the 2 tablespoons of olive oil. Add the garlic and sauté for 1-2 minutes.

Add the chunky salsa, diced tomatoes, tequila, lime juice, cumin, chili powder and lime zest. Bring to a simmer and cover the sauce for 30 minutes.

Add the chicken chunks to the sauce to reheat. To thin the sauce, use the reserved chicken broth. Pour mixture over cooked linguine and serve with fresh Parmesan cheese. Garnish with fresh cilantro.
