Chicken And Dumplings Recipe

This Chicken and Dumplings recipe is easy to make.
Traditionally the dumplings are made homemade, but in this recipe it calls for flour tortillas. You will swear it was homemade by this tasty version.

3 pounds of chicken thighs

½ pound of boneless chicken breast

1 package of flour tortillas 8-10 cut into quarters

1 can of condensed chicken soup

1 stick of unsalted butter

Kosher salt to taste

Crushed black pepper to taste

1 can of chicken broth

½ can of evaporated milk

Wash chicken thoroughly and then put into a large pot and fill half full with water. Cook the chicken over medium high heat for 30 minutes or until done.

When done, remove from pot and shred the chicken off of the bone. Add back into the pot.

While the chicken is cooking, cut the tortillas into quarters.

Add to the pot, condensed chicken soup, unsalted butter, chicken broth, salt and pepper.

Bring the pot to a roiling boil.

When it reaches to the boiling point, add the cut tortillas into the pot one at a time so they will not clump together.

At this point do not stir the tortillas. Move them around gently with a spoon.

Continue to cook at a medium to high heat for about 10 minutes,

Reduce heat and add the evaporated milk for an additional 3 minutes.

Season the chicken and dumplings with salt and pepper.Serve while hot.
