Cajun Chicken Wings



This baked Cajun chicken wings recipe is easy to make. It's slightly spicy with flavors of cayenne pepper and paprika.

12 chicken wings-tips removed

5 bay leaves-crumbled into bits

1 teaspoon of cayenne pepper

1 teaspoon of ground cumin

1 teaspoon of coriander

4 cloves of garlic, minced

1 1/2 teaspoons of dry mustard

2 teaspoons of paprika

1 teaspoon of thyme

2 teaspoons of kosher salt

2 tablespoons of brandy

2 tablespoons of fresh lemon juice

2 tablespoon of fresh lime juice

Place the chicken wings in boiling water for 10 minutes. Drain and set aside to cool.

Preheat oven to 375 degrees.

Using a mortar or pestle, grind the bay leaf, cayenne pepper, coriander, cumin, garlic, mustard, paprika, thyme and salt for about 10 minutes. Add the brandy, lemon and lime juices to the herbs mixture and stir into a paste.

Using a pastry brush, cover on both sides of each chicken wing with the paste.

Place the chicken wings on a baking sheet. Bake for 30 minutes or until the wings are deep brown in color and are crispy.
