Baked Catfish And Pecans Recipe

Pecans are used in plenty of southern dishes. This Baked Catfish And Pecans Recipe is delicious with butter and lemon juice.

2 1b catfish fillets

1 tsp Emeril's Fish Rub

1 cup of flour

1/4 tsp of cayenne pepper

1 tablespoon of lemon zest

1/2 cup of unsalted butter

1/4 cup of pecans, chopped

1 tablespoon fresh lemon juice

1 tablespoon of Worcestershire sauce

2 tablespoons of fresh parsley for garnish

Make the pecan sauce by combining 1/4 cup of the butter, chopped pecans, lemon juice and Worcestershire sauce and mix well.

Combine the flour, Emeril's Fish rub, cayenne pepper and lemon zest. Roll the catfish into this mixture to coat well.

Melt the remaining 1/4 cup of unsalted butter in a large frying pan. Brown the catfish over medium heat until light brown in color. Turn once to brown both sides.

Place the fillets in a well greased baking dish. Sprinkle pecan butter sauce over the catfish. Sprinkle with additional pecans if desired.

Bake uncovered at 350 degrees for 12 minutes or until fish flakes easily with a fork.
