Roasted Garlic Mashed Potatoes Recipe



Who can resist potatoes? This roasted garlic mashed potatoes recipe really comes alive with flavor. I chose Yukon Gold potatoes because they have a nice buttery taste, but feel free to use whatever you have on hand. Finish this side dish with a touch of fresh chives.


2 pounds of Yukon Gold potatoes, peeled and cut into large chunks

8 cloves of garlic that have been roasted and mashed

1/4 cup of heavy cream

2 tablespoons butter, softened

1/2 teaspoon of kosher salt

1/4 teaspoon ground black pepper

2 tablespoons of fresh chives (optional)


Add potatoes to a large pot. Cover with two inches of water. Bring potatoes to a boil and cook until done, about 15 to 20 minutes.


Drain well and put back into pot. Add heavy cream, roasted garlic, butter, salt and pepper. Mash the mixture well using a potato masher until creamy in consistency. Finish with the 2 tablespoons of chives if desired. Serve at once while hot.
