One Pot Meals-Soup is "What's for Dinner?"

With the cold winter months, I love to make soup. Not just any soup, but a "hearty" soup that can be filling and can become a complete meal.

The process of making it can be a timesaver too while in the kitchen depending on the type of soup. The benefit of also being in one pot, makes clean up a nice added bonus.

As with most of my recipes, I like bold flavors and soup is no exception. In this newsletter, I want you to try this delicious bread soup with smoked sausage.

At a recent cooking demonstration that I do weekly to the general public in Boston, this soup was a hit with folks who attended. The soup is Spanish inspired with a flavoring base of "sofrito" ( a mixture of peppers, onions, garlic and cilantro.) It also has one of my favorite spices which is " Spanish smoked paprika."

What is "Spanish smoked paprika? It is made by the process of smoking peppers slowly over oak wood. The flavor can not be beat if you want to give your food depth of smoked flavor. Make sure to get Spanish smoked paprika as it definitely is in a class of its own from regular paprika.

This spice can be purchased from mild to hot. When you don't desire heat but love smoky flavor, opt to go with a mild one. You can purchase smoked paprika online or seek a local producer in your area who carries the spice. I use a brand I purchase off of called "La Chinata."

This is what smoked paprika looks like: So here is the recipe....Smoked Sausage Soup with Red Beans & Cilantro. You will really love the flavor and textures of this hearty soup!

Smoked Sausage Soup with Red Beans & Sofrito

Makes 4 Servings

(About 2 cups per serving)


1 jalapeno pepper, seeded and chopped

1 green pepper, roughly chopped

1 red onion, roughly chopped

1 clove of garlic, roughly chopped

1/2 cup of cilantro, roughly chopped

2 tablespoons of water

(Soup Ingredients)

2 tablespoons of olive oil

1 cup of cooked chicken or turkey smoked sausage, cut into small chunks

2 teaspoons of Spanish smoked paprika (mild or hot depending on how spicy you like)

3 tablespoons of tomato paste

6 cups of reduced sodium chicken broth or regular broth

2 cans of red beans, rinsed and drained

4 cups of crusty whole wheat bread or French baguette

Salt & pepper to taste


Make the sofrito, by combining all of the sofrito ingredients into a food processor or blender Use the pulse function. (set aside.)

In a large soup pot, bring the pan to medium heat. Add the olive oil and then the sofrito. Stir the vegetable mixture until its fragrant for 2-3 minutes. Add the cooked smoked sausage and saute for another minute or two. Add the smoked paprika and tomato paste and stir to coat until mixed.

Add the chicken broth and bring to a boil. Simmer for about 5 minutes. Add the rinsed red beans and wheat bread and simmer until the soup thickens for another 5-7 minutes.

Season with additional salt and pepper if needed. Serve.
