Crab Bisque Recipe



This tasty crab bisque recipe is quick and easy to make. It is made with a scotch whiskey for added flavor.

3/4 lb of crab meat

1/4 cup unsalted butter

1 cup whipping cream

1/4 scotch whiskey

1 quart of milk

1/4 teaspoon kosher salt

1/8 teaspoon of white pepper or cayenne pepper

2 tablespoons of fresh chopped parsley

Flake crab meat, picking over to remove any cartilage. Set the crab meat aside until ready to use.

Melt the butter into a large saucepan over medium heat. Stir in the crab meat, whipping cream and scotch whiskey. Stir until heated, but make sure that the mixture does not come to a boil.

Stir in milk and season with salt and pepper. Cook until the mixture becomes very hot, but does not come to a boil. Pour into individual serving size bowls and garnish with fresh parsley.
